How to change sent mail default text
Tip: To modify the text of the mail that is sent on triggered workflows, use the search tool to find the "Send email" action:

Admin Demo Page
I noticed the admin demo page is publicly accessible and doesn’t require a signup or login. Is this intentional, or is there a way to restrict access or require a login when you press that button?

Yes, this has been done for demo purposes, to show all the template's available functionality.
You can remove this workflow
and set a corresponding one instead, through a conditional:
